As a Brit in Norway, it is natural for me to draw inspiration from my upbringing; from "The English countryside" and Worcester, where I was born and raised.
The kitchen has been my room and my playpen since I turned 15. And the road to Norway was via France and snowboard life with a job as a chef in Chamonix. It was Another Etage at Continental that lured me to Norway. And a girlfriend. And snow. And snowboard slopes. Then followed a nice time at Gamle Raadhus, and a trip back to England, where I had the pleasure of working at Fat Duck.
In 2007 I started a café and nightclub at Steen & Strøm. And since 2015, I have further developed CRU, as co-owner and general manager. My passion is to give guests a wonderful experience of the food, service and wines. Simply exceptionally good food and wine. I am in love with flavors and the artistic presentation of food. And I love looking for the perfect balance in each and every dish, for the palate as well as for the eye. My personal ambition for CRU is to be one of the restaurants you think of when you want really, really good food and wine in Oslo.
